Alexander Brandon and Michiel van den Bos used Tracker programs for all their music, including the music for Unreal. Not sure what program van den Bos used but Brandon used Impulse Tracker.

As for what equipment they used for making the music, besides a computer, I have no idea. Sorry about that.

Alright, this is as much as I can give you:

Samples they've used (Sound hardware):
http://en.wikipedia.org/wiki/Korg_M1
http://en.wikipedia.org/wiki/Moog_synthesizer
http://en.wikipedia.org/wiki/Roland_D-50
http://en.wikipedia.org/wiki/Yamaha_DX7
http://en.wikipedia.org/wiki/Gravis_Ultrasound
http://en.wikipedia.org/wiki/Sound_Blaster_AWE32
http://www.maz-sound.com/

Trackers:
http://www.users.on.net/~jtlim/ImpulseTracker/
http://www.pouet.net/prod.php?which=13350
http://www.pouet.net/prod.php?which=24100 (WARNING: Cannot be used in DOSBox, because of the stupidity of the DOSBox dev team.)
http://www.pouet.net/prod.php?which=13351 (WARNING: Again, due to stupidity of DOSBox's devteam this cannot be used properly unless core=simple, and the sound will not be good unless you use it with a GUS)

Most artists took samples from each other and gave credits, most of the samples in Unreal's music in this case, was either sampled by Alexander Brandon himself, or sampled by Micheal Van Den Bos, Andrew Sega, or Dan Gardopée. However, a majority of samples came from the synthesizers I just listed at the top... Good luck finding those.
